I have always been told you don't need to change the tranny fluid EVER, no matter what tranny it is. I do... Personal preference I guess.
When ever you feel like it, but not very often... Dextron III I believe.
I took a look at some pictures of the E320, and I couldn't find it either. Since you have a sealed tranny, you probably don't have one. This prevents you from over filling the transmission since there is no way to get the fluid back out. You probably can't change the fluid on your car.

I'm also a Newbie with M-B, having just bought a '99 E320 with 83,000 miles. I did see someone else post on the net that there is a M-B tool you can purchase that will check the tranny lube level (it's just a dipstick), and you can change the lube yourself. Sounds worth following up!
I've done nearly all my work on my cars for decades (I don't machine cylinder heads), mostly on various Alfas, and do not intend on the car ever seeing the inside of a M-B dealership.
