So you think Lugnut, that the thief went inside the car, took the time to look around, remove briefcase and cell phone, place them on the surface outside, disable tracking device, only to get back to his flatbed and bang the Mercedes on it.

Your example is certainly possible. So are others. Do you expect car thievery to be black and white? Is there a Polack school of car stealing that says you can only steal cars one way? Step 1, step 2, step3, and you're done. No other steps, no variations.
With a briefcase and cell phone in view, the thief may have determined that your friend is an idiot. Is your friend a Polack, too? Such an idiot may have the key in the briefcase or hidden in the car. Having the key would be the easy way to steal the car, no?
What if the briefcase had been full of money? The thief would have taken the briefcase and left the car.
Like I said, you think in very simple terms. Like a young child. Go out and play.

From what I know, the thieves had to have access to the car interior and time to deal with it.

Your "Friend" probably had it stolen, or it was repo'd.
Stolen? Either that or he is just some jerk who couldn't afford his nice car. He probably gave a key to someone who returned it after the car was packed away, and now he has a "good" story to boohoo and tell anyone who will listen. No wonder our insurance rates are always climbing.
Any vehicle can be stolen at any time. No professional thief would take a car at the mall with the alarm blaring although a Mercedes mechanic could easily steal it and silence the alarm system by removing the correct fuse or cutting a wire even before driving it off. Of course, if he had a key…no alarm!
