Default Oil Viscosity Recommendation my 2001 SL500

I have approximately 49K on my 2001 SL500. I'm getting ready to change the oil. I will be using Mobil 1, most likely their Advanced or Extended variety. The "Factory Approved Service Products" book that came with the car shows a multitude of viscosities depending on Temperatures. While they all are OK at 86F and above, those "OK" for below -13F are 0W-, or 5W options. Those rated for down to -4F are 10W-30,40,50,60. Those rated for down to +5F, are 15W-40,50. Those rated for down to +37F are 20W-40 or 50.

I live in upstate NY, the car is stored all winter. Usually comes out in May and back to bed in Oct/Nov. This results in a usual Temp range from a low of 450F to a possible high of 95F.

While I could technically use all of these recommended viscosities, I'm leaning towards 10W-40 or 50, and see no need to expose this vehicle to very low viscosity options (Yes I know the oil is supposed to adjust accordingly, but I have two newer vehicles that use use 0W, or 5W, and it sure pours out very thin, Any suggestions out there for my situation?

Also, If, I don't use a genuine MB filter, what others out there are equal quality for such a prized possession?
