On a consistant basis, the temp guage needle bounces from below 80 to pin out at 120. When I tap the dash it settles down to below 80 but eventually starts bouncing again.
I have been told that there is apparently a ground screw that can get loose or corrode.
Is there an easy fix?
Do I have to go through the instrument panel? How do you get in there anyway? Is it a wire specific to the guage and is it hard to indentify?
Any help will be appreciated.

I haven't seen this exact problem, so I can't say, on the wire. You aren't likely to cause any damage by seeing if there are any obviously corroded or oxidized connections on the back of the instrument panel and cleaning any you find.
To get the panel loose, you can either use the MB tools(or appropriately bent coat hanger..), or you can reach up from below and push the indicator panel out from the back side.
