There is a reservoir that is labeled something like Hydraulic Oil. I need to refill this. What is it that I'm looking for? Any retail store recommendations in the US that would carry this?

The oil is available from your MB dealer, and it is suggested by many! The other question where did it go, it could be a indicator of a ruptured accumulator unless you can see the strut leaking. The accumulators are spheres with a diaphram separating the nitrogen and oil which acts as a cushion.
