Default Temp gauge problem 71 280se

In our 71 280se 3.5 coupe we have a problem with the temperature gauge. The gauge works but it shows the temp being lower than what it really is. For example it will read 30 degrees cooler than it really is (I know this because when the red light goes off saying its overheating, the gauge is not where it should be).
What could cause this and what could some fixes be? Also how come the red light comes on if the gauge is not the same? Y'all might have some suggestions or resources, I am open for general discussion too. Thanks and y'all have a great day.
