Thanks for the reply sleepwalker, but I should have mentioned in my original post that i have filled my reservoir a couple of times now and its taken about a week for the fluid to drain to the point where the steering started to make a noise when I turned the steering wheel.
But i'll check the rubber gasket, could you do me a favour and tell me on which side and what it looks like, thanks.

the power steering reservoir cover.
if the fluid is low, it will really make a gurgling noise. your problem must be a leak.
the power steering box often leaks. it is a rule that if you got an accident and bent something on the steering linkage, you'll have to replace that steering box. very expensive, but a good mechanic who pays attention to proper measurement and friction torque can overhaul it easily.
raise you car up, or you can crawl down there too and check for the oil leak. it can be the high pressure hose too.
