I'm slowly getting the "Mean-Green Benz" 1979 300SD together and am trying to find out what my options are for interior parts. I will be needing everything from the dash to the rear window carpet, from the sunroof liner to the carpet so ANYINFO you can offer is greatly appreciated. What partscan be substituted from other model or year? For example, will the seats from a 300D fit the 300SD or will thewood dash from an 1982 SD fit mine?

While you may have some luck with the seats from another chassis, the wood trim would have to come from another W116 body. The 82 300SD ( W126 ) has a completely different dash panel layout.
