Default Auxilary fans

Regarding 190e 1989 2.6. Installed a new auxilary fan from a junk yard. Both fans work checked with external power unit. The old fan shorted the system and locked itself up so it was even difficult to turn by hand. The new auxilary fan has a larger magnet I think it it from a 240 series, an even older mercedes. Anyways when do the fans kick in and at what temperature for the 2.6 engine? 100 C or is it less. Just installed another new radiator and the engine does not over heat.
To replace the abused relay for the fans, I had one ordered from performance parts. received a brand new relay, colored orange stamped with mercedes emblem, made in hungary, cool part the relay itself is fused. Here's the primary question, how can I check to see if the relay works with the new fans? What if I cannot get the radiator hot enough to activate the fans ie. new radiator?
