My 79 4540SLC engine is running between
175 degrees and 200 degrees when driving, usually the temp is toward the low end, but will shoot up to 200 degreesF if I let it idle for a few minutes. MY temp gauge is in F by the way. What is the "normal" running temp of these engines. The owners manual and shop manual are both vague on the subject except if the temp gauge goes into the red.?

That sounds normal. I don't know what it should be exactly, but I would guess it has a 180* or 190* thermostat. Running up to 200 during idling won't hurt anything, especially if comes back down when the car moves.
