Engine operating temperature

My 2003 SL 500 water temp is 90-95 deg. C with the A/C off. Temp comes down to 80 deg, C with A/C on. Obviously fan is not running with A/C off. I assume that fan is thermostatically controlled and probably has defective sensor. At what temp should fan kick-in? Would appreciate any info.
