Default 99 ML430 brake job?

This'll be the first time I've done this car and have a couple of questions.

Can I compress the calipers and let the fluid run back to the reservoir without causing problems to the antilock system?

Are there any tricks to the job?

Rotors were replaced last time the job was done and look fine. Should I have them turned?

Anybody using EBC pads (Green Stuff)? How are they?

How about getting the rotors turned, is it necessary? They look pretty clean!
